A standard note is stored as readable text. That is what lets search match your phrased question against what you wrote, and it also means the system can read it.
For anything sensitive, use the lock button. A locked note is encrypted before it is saved and needs a passphrase to open. Search is less robust there: locked notes are found by the words they contain, not by meaning.
Results are ranked by similarity, not probability. Your wording will never match the note exactly, so nothing reaches 100%. The 60s to low 80s is a near match. Don't read too much into the number.
This is the only way back into your locked notes if you forget the passphrase. It is not stored anywhere and cannot be reissued.
Lose both and the notes are gone for good.
